Fasülye - a recipe for sugar peas

This recipe is definitly a basic for every turkish kitchen lady out there. Its preparation takes you only half an hour at most and is very compatible to rice.

(for 1 very hungry person)

1 onion
3 handful of sugar peas
2 tomatoes
1 tablespoon of tomato paste
1 tablespoon of sugar
salt and black pepper
olive oil

1. Cut of the edges of the sugar peas and wash them thoroughly. Cut the onion in thin halves and start heating them up with about 3 tablespoons of olive oil (use rather more then less).

2. Add the peas to the onions and cover with sugar, salt and 1 espresso cup of cold water.

3. After a couple of minutes I add the quartered tomatoes and paste. Now let it simmer for 15 minutes at low-medium heat.

Serves very nicely with rice and semi-solid joghurt. Afiyet olsun!
