Lemon-Thyme-Cake
it is New Year's Eve - do you need a present to bring to the party tonight? How about a quickly prepared homemade cake? here is a refreshing new recipe by hummingbird bakery that is easy to make - you'll only need about an hour of preparation time...
ingredients

190 g butter, at room temperature
lemon zest of 2 organic lemons
2 tsp thyme (finely chopped)
190 g sugar
3 eggs
190 g all purpose flour
1 tsp baking powder
1/4 tsp salt
25 g sour cream / yoghurt
sirup
40 g sugar
zest and juice of 1 organic lemon
2 tsp thyme (finely chopped)
some thyme for decorating

instructions
- put oven to 170°C. butter cake tin and sprinkle with some flour.
- mix butter, lemon zest, sugar and thyme on medium speed. switch to high speed for about 2 minutes.
- then, on low speed, add eggs - one at a time.
- prepare dry ingredients: in a different bowl mix flour, baking powder and salt. sift thoroughly and add to butter-sugar mix in two portions.
- add sour cream and bake for 40 minutes.
- prepare syrup combining all listed ingredients in a pan, adding 40ml of water and bringing to boil.
- let boil until mass is reduced to half of its initial amount.
- when cake is done, immediately spread syrup on cake evenly.
- let cake cool for 15 minutes. take cake out of tin and decorate with some thyme.
et voilà a combination of spice and lemon that'll make you jump in your seat or something. I hope you like it. we did :)
